Recipe for salt and pepper chicken
A crispy, flavorful, and easy-to-make dish with a perfect balance of salt, spice, and crunch.
Ingredients
• 2 boneless, skinless chicken thighs (or breast), cut into bite-sized pieces
• 2 tbsp cornstarch (or potato starch for extra crispiness)
• 1 tsp white pepper (or black pepper)
• ½ tsp sea salt
• ½ tsp garlic powder
• ½ tsp onion powder
• 1 tsp Chinese five-spice powder (optional, for extra depth)
• 1 tbsp soy sauce
• 1 tsp Shaoxing wine (optional)
• 1 egg white (for coating)
• Neutral oil for frying (vegetable or peanut oil)
Instructions
1. Marinate the Chicken:
• In a bowl, mix chicken pieces with soy sauce, Shaoxing wine (if using), garlic powder, onion powder, salt, and white pepper.
• Add the egg white and mix well.
• Toss in cornstarch until the chicken is fully coated. Let it sit for 10 minutes.
2. Fry the Chicken:
• Heat oil in a pan or wok over medium-high heat until hot (about 350°F).
• Fry the chicken in batches, ensuring the pieces don’t touch. Cook for 3-4 minutes per side until golden brown and crispy.
• Remove and drain on a paper towel.
3. Final Toss:
• In the same pan, remove excess oil, leaving about 1 tbsp.
• Add the fried chicken back in and sprinkle additional white pepper and salt to taste. Toss quickly to coat evenly.
4. Serve:
• Enjoy hot with rice or as a crispy appetizer!
